There are several Parmigiano Reggiano factories within 2 hours from Florence that offer tours where you can see the interesting transformation process from milk to the branded wheels of cheese that are aged for at least 24 months to achieve their top quality. At the end of your tour you may enjoy a tasting of the cheese, perhaps accompanied by honey, prosciutto di Parma and some local wine.
Although less well known internationally, Italian Pecorino is a very high quality cheese which is produced from 100% whole sheep milk and comes in a vast variety of qualities, generally broken down into 2 categories; spicy and sweet or aged and fresh. Dating back to the Etruscans, pecorino is the most popular cheese in Tuscany and different qualities are traditionally combined with specific dishes which seasonally grace all Tuscan tables.

Tasting tours in a local farm or factory usually include an interesting explanation of the production process followed by a tasty picnic.
